Blueberry Cupcakes

Last weekend I was meeting up with some good friends for a potluck. I am the designated desert person, so i was making blueberry cupcakes (that by the way tuned out delicious!!). 

Well in the kafuffle of getting ready I forgot the cupcakes!!! YAIKS! I didnt remember until I parked the car! It was too far to go back home, thats when this cake was a REAL lifesaver! Ran to the corner store and got the berries and ice cream, and the rest is stuff that you would find in every pantry! Delicious and easy, dessert was saved! puuuh!  

For the cupcakes though (well, they are actually more like muffins, but still) the perfect sunday breakfast! Here we go:

This will make about 6 big or 12 small cupcakes:

• 1 3/4 cups of flour
• 2/3 cup sugar
• 1 tablespoon of baking powder
• 3/4 teaspoon salt
• 6 tablespoons butter or margarin
• 1 egg
• 1/2 cup milk
• 1/2 teaspoon vanilla essence 
• 1 cup frozen or fresh blueberries 

Preheat the oven to 390F (200C). 

Mix flour, sugar, bakingsoda and salt in a mixing bowl. Mix in the butter until you get a crumble like consistency (look at the picture above). Mix the egg, milk and vanilla essence and pour it in. 

Mix it all together, but not too well. It should be a little bit "lumpy". Mix in the blueberries, pop it in the cupcake cups and cook for about 20-25 min. Enjoy!!
