Clementine Oranges Muffins
The other day I woke up at an unreasonable hour, and after failing to go back to sleep, I decided to surprise my family with muffins for breakfast. 
The recipe is from Nigella Lawson's book Nigella Bites, and calls originally for oranges. Not finding any of those laying around, I opted for one of its cousins; the clementine orange.

Ingredients

Ingredients:
75 g butter
250 g flour
2 ts baking powder
½ ts baking soda
25 g ground almonds
75 g sugar
the zest of 3 clementines (or one orange if you prefer that)
1 dl clementine juice
1 dl milk
1 egg



Melt the butter. Ground almonds in a blender. If can't be bothered with this, you can always replace the almonds with flour. I've done that before, but I certainly do prefer the crunch that the almonds provide. 

Mix the flour, salt, baking powder, baking soda, salt, ground almonds, zest and sugar together. 

In another bowl, mix the eggs, milk, and juice. 

Mix the dry ingredients with the wet. 

The secret to making good muffins is to limit the stirring at this point, the batter should be lumpy. 



Divide the batter between 12 muffin cups and bake for 20 min in a 200 degrees C oven. 



Serve with honey butter or the jam of your choice.
